Ingredients
1 1/2 cup penne or spiral pasta
250 gram cooked mixed seafood, chopped
1 red capsicum, seeded, thinly sliced
1 mango, seeded, peeled, chopped
1 avocado, seeded, peeled , chopped
2 green onions, finely sliced
1/2 cup chopped herbs
Dressing
1/2 cup egg mayonnaise
2 tablespoon sweet chilli sauce
1 lime, juiced
Method
1. Cook pasta in a large saucepan of boiling, salted water, following packet instructions. Rinse under cold water and drain well.
2. In a large salad bowl, combine all ingredients.
3. For the dressing, stir all ingredients together in small bowl. Season to taste.
4. Pour dressing over salad, toss well and keep chilled until ready to serve.
