Chilli chicken with cashews nuts

Tender chicken with chilli jam and cashew nuts makes a great mid-week dinner. Use a little chilli jam the first time you make this recipe and add more or less depending on your taste.

Ingredients

  • 1 cup (150g) raw cashews
  • 625 gram (1¼ pounds) chicken breast fillets, sliced thinly
  • 2 tablespoon chilli jam
  • 625 gram (1¼ pounds) choy sum, chopped coarsely

    Dry-fry nuts in heated wok until browned lightly; remove from wok.

    Combine chicken and half the chilli jam in medium bowl. Stir-fry chicken mixture, in batches, in heated oiled wok until cooked through. Remove from wok.

    Stir-fry choy sum, remaining chilli jam and ¾ cup water in wok until choy sum is tender. Return chicken and nuts to wok; stir-fry until hot. Season to taste.

Notes

Chilli jam is available from Asian food stores, delicatessens and the Asian or gourmet section of larger supermarkets. There are several varieties available, each differing in their heat intensity.
