Char-grilled octopus and artichoke salad

This simple salad makes a great lunch dish for a light meal, or as part of a spread with which to welcome guests.

Ingredients

Char-grilled octopus and artichoke salad
  • 1 cup loosely packed fresh dill
  • 1 kilogram cleaned baby octopus, halved
  • 1/4 cup (60ml) mustard seed oil
  • 2 teaspoon finely grated lemon rind
  • 1/4 cup (60ml) lemon juice
  • 500 gram marinated artichokes, drained

Method

    Coarsely chop half the dill; combine in large bowl with octopus, oil, rind and juice.

    Cook octopus mixture on heated oiled grill plate (or grill or barbecue) about 2 minutes or until tender.

    Combine octopus with artichokes and remaining dill in large bowl; season to taste.
