Broccolini and snow peas in oyster sauce

Broccolini and snow peas in oyster sauce
  • 2 cup (500ml) chicken stock
  • 1 litre (4 cups) water
  • 2 bunches broccolini, halved crossways
  • 400 gram snow peas, trimmed
  • 1/4 cup (60ml) oyster sauce
  • 2 teaspoon sesame oil

    Bring stock and water to the boil in a deep frying pan or saucepan. Add the broccolini and simmer, uncovered, for 2 minutes.

    Add snow peas, simmer, uncovered, for 1 minute, or until snow peas and broccolini are just tender. Drain.

    Arrange broccolini and snow peas on a serving platter and drizzle with oyster sauce and sesame oil. Serve immediately.


Not suitable to freeze. Suitable to microwave. This recipe is best made just before serving. You will find oyster sauce and sesame oil at supermarkets or Asian specialty stores.
