Blood orange adds greater depth as well as sweetness to a classic margarita.

Method

1.Rub one lime half around the rim of a 260ml old-fashioned glass; turn the glass upside-down and dip wet rim into a saucer of salt.
2.Juice the limes (you need 30ml of juice).
3.Place the ice cubes, tequila, juices and syrup in a cocktail shaker; shake vigorously. Strain into glass.

You can buy sugar syrup from liquor stores or make your own. Stir 1 cup caster (superfine) sugar with 1 cup water in a small saucepan, over low heat, until sugar dissolves; bring to the boil. Reduce heat; simmer, uncovered, without stirring, for 5 minutes. Remove from heat; cool to room temperature. Store in an airtight container in the fridge for up to 1 month.
