Barramundi with tomato, caper and walnut dressing
- 2 x 185g fresh barramundi fillets
Tomato, caper and walnut dressing
- 125 gram cherry tomatoes
- 30 gram butter
- 2 teaspoon lemon rind, finely grated
- 1 teaspoon lemon juice
- 1 teaspoon capers, drained, rinsed, chopped finely
- 1 1/2 tablespoon walnuts, chopped finely
- 1/4 cup fresh flat-leaf parsley, chopped coarsely
Method
Barramundi with tomato, caper and walnut dressing
- 1To make tomato, caper and walnut dressing: On a heated, oiled grill plate, cook tomatoes for about 2-3 minutes, or until tender.
- 2In a small saucepan, melt butter on medium heat; add tomatoes and remaining ingredients, stir for about 1-3 minutes, or until hot.
- 3Cook fish on a grill plate (or grill or barbecue) for about 3 minutes each side, or until just cooked through.
- 4Divide fish among serving plates. Top with dressing. Serve.
