Ingredients

  • 2 x 185g fresh barramundi fillets
Tomato, caper and walnut dressing
  • 125 gram cherry tomatoes
  • 30 gram butter
  • 2 teaspoon lemon rind, finely grated
  • 1 teaspoon lemon juice
  • 1 teaspoon capers, drained, rinsed, chopped finely
  • 1 1/2 tablespoon walnuts, chopped finely
  • 1/4 cup fresh flat-leaf parsley, chopped coarsely

Method

    To make tomato, caper and walnut dressing: On a heated, oiled grill plate, cook tomatoes for about 2-3 minutes, or until tender.

    In a small saucepan, melt butter on medium heat; add tomatoes and remaining ingredients, stir for about 1-3 minutes, or until hot.

    Cook fish on a grill plate (or grill or barbecue) for about 3 minutes each side, or until just cooked through.

    Divide fish among serving plates. Top with dressing. Serve.
