Tomato, caper and walnut dressing
Method
1.To make tomato, caper and walnut dressing: On a heated, oiled grill plate, cook tomatoes for about 2-3 minutes, or until tender.
2.In a small saucepan, melt butter on medium heat; add tomatoes and remaining ingredients, stir for about 1-3 minutes, or until hot.
3.Cook fish on a grill plate (or grill or barbecue) for about 3 minutes each side, or until just cooked through.
4.Divide fish among serving plates. Top with dressing. Serve.
Not suitable to microwave. Not suitable to freeze.
