50/50 Bolognese comprises mince AND lentils, and makes for a nourishing, hearty meal. Best of all this easy bolognese recipe will be on the table in just 30 minutes! It serves four, with leftovers, so pack a serving to take to work for lunch the next day.
A tip from the Test Kitchen: Bolognese is great way to clear out the crisper of any ‘less than fresh’ vegies such as carrots, zucchini, eggplant etc. Chop finely and add when frying off the onion.

1.Heat oil in a large deep frypan over medium heat; cook onion, stirring, for 5 minutes or until golden. Increase the heat to high, stir in garlic and beef mince, cook, stirring for 10 minutes or until browned. Add herbs, diced tomatoes and puree; cook, stirring occasionally, for 5 minutes. Add lentils and bring to the boil; cook, covered, for 10 minutes or until sauce thickens. Season to taste.
2.Meanwhile, cook pasta in a large saucepan of boiling salted water until al dente; drain.
3.Divide spaghetti and some of the beef mixture among serving bowls. Serve topped with parmesan and extra basil leaves.
Suitable to freeze.
