1.Bring a large pot of water to the boil, cook the noodles for 2-3 minutes or until just tender. Drain and rinse under cold water.
2.Cool the soba noodles, then chill in the refrigerator. Make a dressing with lime juice and japanese soy sauce, ginger and brown sugar, and vegetable oil whisked together in a large bowl. Add two small carrots and two trimmed celery stalks, both cut into fine matchsticks, and the soba to bowl, toss to combine.
3.Serve sprinkled with a finely shredded sheet of toasted nori.
