Bright, light and fresh, these lime and coriander oysters make a great starter or shared platter for a party.

1.Carefully remove oysters from shells; wash and dry shells. Return oysters to shells; place, in single layer, on serving platter.
2.Place remaining ingredients in screw-top jar; shake well. Divide dressing among oysters.

Dressing can be made a day ahead. Refrigerate until required.
