Garlicky green beans & peas with pine nuts

Method

1.Trim ends from green beans. Twist off ends from sugar snap peas and snow peas by pulling the end off down towards the tail to remove the ‘string’.
2.Fill a large saucepan with water and bring to the boil. Add salt.
3.Place a small sieve over a small stainless steel bowl. Place garlic, oil and pine nuts in a small non-stick frying pan; stir continuously over medium heat for 4 minutes or until garlic is golden. Strain into bowl; reserve oil. Pat garlic and pine nuts dry with paper towel; reserve.
4.Whisk mustard and lemon juice into reserved oil.
5.Add beans to water; cook for 1 minute. Add sugar snap peas; cook for another 1 minute. Add snow peas; cook for a further minute. Drain. Transfer beans and peas to a bowl of iced water; cool. Drain.
6.Toss beans and peas with dressing. Serve scattered with reserved garlic and pine nuts. Season to taste.
