Chilled soba noodles

This simple platter of chilled soba noodles with dipping sauce, spring onions, nori and wasabi is a complete taste sensation.

1.In a medium bowl, mix dashi, soy and mirin into a dipping sauce; refrigerate to chill.
2.Bring a large pot of lightly salted water to the boil. Add soba noodles and return to the boil. Cook (5-8 minutes) until just cooked (al dente). Drain noodles into a sieve and rinse under cold running water. Rub noodles together with hands to remove excess starch. Put into a bowl of iced water until completely chilled. Drain well and divide among 4 serving plates; sprinkle with nori strips.
3.Serve each plate of noodles with an individual bowl of dipping sauce. Arrange condiments on small individual dishes or onto a plate to share.
