Make your own refried beans and boost your Mexican feast. These smashed beans with spices, tomato and chilli add flavour and texture to your big Mexican spread. Refried beans can be added to any of your favourite bowls, tacos, enchiladas and more for a vegetarian dish or to add extra texture and flavour to your favourite chicken, pork or beef dish.

If you wanted to add a heartier flavour you could make these with black beans instead.

1.Combine beans, the water, coarsely chopped onion, garlic, bay leaf and chilli in large saucepan; bring to the boil. Reduce heat; simmer, covered, about 1½ hours or until beans are tender.
2.Drain bean mixture, discard bay leaf; reserve ½ cup cooking liquid. Blend or process bean mixture with reserved cooking liquid until coarsely mashed.
3.Heat oil in large frying pan; cook finely chopped onion, stirring, until onion softens. Add tomato; cook, stirring, until tomato softens. Stir in bean mixture; cook, stirring, about 10 minutes or until thickened. Season to taste.
