1.Combine the rind, herbs and cream cheese in a small bowl; season with freshly ground black pepper.
2.Spread the cream cheese mixture over the bread slices. Top half the slices with gravlax, then cover with the remaining bread slices.
3.Cut crusts off sandwiches and cut into quarters or fingers.

Not suitable to freeze or microwave.
