Ingredients: 16 cooked medium king prawns (720g); 4 large butter lettuce leaves; 250 gram crab meat, shredded coarsely; 1 avocado (320g), sliced thinly; Thousand island dressing; 1/2 cup (150g) mayonnaise; 1 tablespoon tomato sauce; 1/2 red capsicum (75g), chopped finely; 1/2 white onion (40g), grated finely; 8 pimiento-stuffed green olives, chopped finely; 1 teaspoon lemon juice

Ingredients

16 cooked medium king prawns (720g)

4 large butter lettuce leaves

250 gram crab meat, shredded coarsely

1 avocado (320g), sliced thinly

Thousand island dressing

1/2 cup (150g) mayonnaise

1 tablespoon tomato sauce

1/2 red capsicum (75g), chopped finely

1/2 white onion (40g), grated finely

8 pimiento-stuffed green olives, chopped finely

1 teaspoon lemon juice

Method

1.Shell and devein prawns, leaving tails intact.

2.Divide lettuce leaves among serving plates; top equally with prawns, crab and avocado.

3.To make thousand island dressing, combine ingredients in small bowl.

4.Drizzle cocktail with dressing.
