Method

1.Rinse lettuce leaves under cold water then drain. Shred lettuce finely. Combine shredded lettuce and mint in a large bowl, cover and set aside.
2.Break vermicelli into short lengths (about 6cm). Place vermicelli pieces in a heat resistant bowl, cover with boiling water and stand 2-3 minutes, stirring to separate strands. Drain vermicelli, then rinse under cold water and drain again, pressing firmly in strainer to remove as much liquid as possible. Transfer vermicelli to a large bowl.
3.Add pork to a heated, greased wok, stir-fry until pork is lightly browned then stir in the sauce and lime juice, simmer for about 2 minutes until pork is tender. Add vermicelli, toss gently over heat to combine with pork mixture and heat through. Place shredded lettuce and mint on serving plates, top pork mixture and garnish with chopped peanuts, if desired.
