This slow-cooked lemon garlic chicken casserole will warm you up from the inside out. With only a few minutes of preparation time required, you can pop this into the oven to bubble away, letting the aroma of lemon and garlic float through the kitchen as your chicken cooks.

Preheat the oven to 140°C (120°C fan-forced).
Combine the flour, salt and pepper in a bowl. Coat the chicken pieces thoroughly in the flour. Place 1 tablespoon of the oil in a large heavy-based ovenproof saucepan or flameproof baking dish over medium-high heat. When it is hot, brown the chicken on all sides. Remove the chicken and set aside.
Place the remaining oil in the pan. Add the onion and garlic; cook, stirring, for 3-4 minutes or until softened and fragrant. Pour the wine into the pan, followed by the stock, a couple of strips of peel and the juice of the lemons. Bring to the boil; return the chicken pieces to the pan. Add the bay leaf. Cover with a lid and bake for 1½ hours. Remove the lid and cook lemon garlic chicken for a further 30 minutes.
If the sauce is too thin at this stage, remove the chicken pieces and turn the oven up to 180°C (160°C fan-forced). Cook the sauce, uncovered, for another 10-15 minutes. Season to taste with salt and freshly ground black pepper, before returning chicken to the pan to serve. Scatter parsley over the top of the lemon garlic chicken and serve with crusty bread or mashed potatoes.
How do I joint the chicken?
To joint the chicken, spread the leg and thigh apart so they are almost in a straight line. Look for the cartilage between the two bones. Slice neatly through with a sharp knife.
To save time, you could buy 4 large drumsticks and 4 whole chicken thighs or chicken thigh cutlets instead of the Marylands.
