If there’s a single dish that sums up childhood for many of us, it’s spaghetti and meatballs. It’s so ingrained in our culture there are even songs written about it. Reconnect with an earlier you, sit down with a big bowl of spaghetti and meatballs.
These simple balls of flavoured mince cooked in a rich tomato sauce is a classic dish that goes perfectly with pasta. Made with mince, it’s not only a tasty meal but also a budget-friendly option for hungry families. Mince is a mid-week staple in most households. It’s cheap, goes a long way and is super quick and easy to cook with.
1.Combine beef, pork, onion, breadcrumbs, milk, egg, capsicum, flat-leaf parsley and garlic in a large bowl, season. Roll mixture into 24 balls.
2.Heat oil in a large frying pan, cook meatballs, in batches, for 5 minutes or unitl browned all over. Drain on paper towel.
3.Heat extra oil in a large saucepan over medium heat; cook extra garlic, stirring until fragrant. Add wine, tomatoes, paste and stock, bring to the boil. Reduce heat to low, cook, covered, for 15 minutes. Add meatballs, simmer, covered, for 25 minutes. Stir in extra flat-leaf parsley, season to taste.
4.Meanwhile, cook spaghetti in a large saucepan of boiling water until tender, drain.
5.Serve spaghetti topped with meatballs and curly-leaf parsley sprigs.
