Herb crusted lamb rack

These delicious herb-crusted lamb racks are brilliant served with kipfler potatoes and a green salad to create a gourmet dinner the whole family will love. Leaving the racks to rest for 10 minutes will guarantee a tender result.

1.Preheat oven to 200°C.
2.Blend or process garlic, herbs and oil until smooth.
3.Place lamb in large, shallow baking dish and press herb mixture onto each rack.
4.Roast lamb, uncovered, about 20 minutes or until lamb is cooked as desired. Remove lamb from oven; cover, stand 10 minutes before serving.
