Method

1.Preheat oven to 220°C (200°C fan-forced).
2.Combine vegetables, cheese and basil in small bowl; season to taste.
3.Make a horizontal cut in each lamb roast to make a large pocket, without cutting all the way through. Push vegetable mixture into pockets. Tie lamb at 3cm (1-inch) intervals with kitchen string. Place lamb on large oiled oven tray.
4.Roast lamb, uncovered, about 35 minutes. Cover lamb; stand 10 minutes. Remove kitchen string, then slice thickly.
