Beef quesadillas

When it comes to quick weeknight dinners, you can't go past homemade Mexican.

Both kids and adults alike will love these Tex-Mex beef quesadillas with sour cream and mashed avocado. They are full of the flavours we know and love. We suggest you don’t bother with cutlery, but napkins are essential!

1.Using a fork, mash the avocado and juice together in a small bowl. Season to taste.
2.Heat oil in a large frying pan; cook the beef, stirring, until browned. Add cumin; cook, stirring, 1 minute or until fragrant. Stir in the beans, tomato and onion. Remove pan from heat.
3.Divide beef mixture among four tortillas; sprinkle with cheese. Top with remaining tortillas. Cook one at a time in a preheated sandwich press, for about 2 minutes or until cheese is melted and tortillas are browned lightly.
4.Cut quesadillas into quarters; serve with avocado mixture, sour cream and lemon wedges.

If you don’t have a sandwich press, cook these in a large frying pan or grill pan. Cook one at a time, over medium-low heat, about 2 minutes each side. Use 2 spatulas to carefully flip quesadillas.
