beef fillet curry with couscous



1.Rub 1 tablespoon of the paste over beef. Cook beef in large heated, oiled non-stick saucepan, uncovered, until browned all over and cooked as desired. Remove from pan; cover with foil to keep warm.
2.Add remaining paste and onion to same pan; cook, stirring, until onion is soft. Add stock, bring to a boil; remove from heat. Stir in couscous; stand, covered, for 5 minutes.
3.Using a fork, gently stir tomato, mint and half of the almonds into couscous mixture. Slice beef; serve with couscous and sprinkle with remaining almonds.
