1.Place rice in a sieve; rinse under cold water, drain. Place rice in a small saucepan; cover with water, bring to the boil. Cover saucepan with lid, reduce heat to medium-low; simmer for 35 minutes or until rice is soft and just split. Drain; cool.
2.Combine rice with remaining ingredients in a large bowl; toss gently to combine. Transfer to a transportable container.
3.Meanwhile, make sesame dressing. Combine ingredients in a screw-top jar; shake just before serving.
4.Drizzle sesame dressing over salad just before serving.
