Self-saucing puddings start with a thickish batter which is spread evenly into a baking dish. Next, sugar and flavourings are dusted heavily onto the surface before it’s gently flooded with water. During cooking the water goes through the batter and forms its own sauce underneath.

For an alcohol-free option, replace the amount of liqueur with brewed coffee.
