Mixed vegetable fritters with smoked salmon

These vegetable pancakes are topped with smoked salmon and covered in a minty, herb yoghurt - perfect for a wholesomely light lunch, brunch or snack.

Cumin and mint yoghurt


1.Prepare pancake mix following packet instructions.
2.Pour into a bowl and add vegetables, cheese and juice. Season to taste.
3.Heat oil in a large frying pan on medium. Cook 4 pancakes for 1-2 minutes, until bubbles appear on surface. Turn and cook for a further minute. Keep warm while cooking remaining pancakes.
4.To make cumin and mint yoghurt: In a small bowl, combine yoghurt with mint and cumin.
5.Serve fritters topped with salmon and yoghurt, and accompany with a green salad.
