1.Heat oil in a large saucepan over medium heat; cook onion, bacon and garlic, stirring, for 8 minutes or until onion softens and bacon crisps. Add tomatoes and stock; bring to the boil. Reduce heat; simmer, uncovered, about 20 minutes, stirring occasionally.
2.Meanwhile, cook sausages in a heated oiled medium fry pan, turning, for 8 minutes or until browned and cooked through; slice thinly.
3.Add sausage to soup with beans; stir until soup is hot. Season to taste.
4.Make gremolata: Combine ingredients in a small bowl.
5.Serve bowls of soup sprinkled with gremolata.
