Polenta is a naturally gluten-free flour made from corn, and it's an extremely versatile ingredient for many recipes for both savoury and sweet dishes. It's commonly served soft as a base for casseroles and stews, but it can be also be grilled and tossed through salads or eaten in place of bread. Try frying in into crunchy chips, or use it to make crusts for lasagnes and pies. You can also add it to cakes, tarts, muffins and biscuits for a tummy-friendly dessert or lunchbox snack. Ingredients

Soft polenta
  • 3 cup water
  • 2 cup vegetable stock in large saucepan;
  • 2 cup polenta.
  • 1 cup milk,
  • 30 gram butter
  • 1/4 cup parmesan cheese;, finely grated

Method

Soft polenta
  • 1
    Combine 3 cups water and 2 cups vegetable stock in large saucepan bring to the boil. Gradually stir in 2 cups polenta. Simmer, stirring, about 10 minutes or until polenta thickens. Add milk, 3 butter and finely grated parmesan cheese, stir until cheese melts.
