Smoked sausages with lentils

Ingredients
- 1 tablespoon olive oil
- 8 schinkengriller sausages (600g)
- 1 cup (200g) green lentils
- 1½ cups (375ml) chicken stock
- 1 stalk celery (150g), trimmed, chopped finely
- 1 medium carrot (120g), chopped finely
- 1 medium brown onion (150g), chopped finely
- 2 sprigs fresh thyme
- 2 cloves garlic, crushed
- 400 canned diced tomatoes
- 1 tablespoon wholegrain mustard
Method
- 1Heat oil in a 4.5-litre (18-cup) slow cooker on sear (HIGH) setting; cook sausages, in batches, turning, for 5 minutes or until well browned. Remove from cooker.
- 2Add lentils and stock to cooker; stir to combine. Add celery, carrot, onion, thyme, garlic, tomatoes and sausages. Cook, covered, on low, for 3 hours.
- 3Remove sausages from cooker; cover to keep warm. Discard thyme. Stir mustard into lentil mixture; season to taste.
- 4Serve lentil mixture with sausages.
