This slow-cooker creation is the ideal budget-friendly comfort meal. With sausages and lentils and plenty of vegies, it’s a weeknight dinner that the whole family will love it.
1.Heat oil in a 4.5-litre (18-cup) slow cooker on sear (HIGH) setting; cook sausages, in batches, turning, for 5 minutes or until well browned. Remove from cooker.
2.Add lentils and stock to cooker; stir to combine. Add celery, carrot, onion, thyme, garlic, tomatoes and sausages. Cook, covered, on low, for 3 hours.
3.Remove sausages from cooker; cover to keep warm. Discard thyme. Stir mustard into lentil mixture; season to taste.
4.Serve lentil mixture with sausages.
