Smoked sausages with lentils

This slow-cooker creation is the ideal budget-friendly comfort meal. With sausages and lentils and plenty of vegies, it's a weeknight dinner that the whole family will love it.

  • 1 tablespoon olive oil
  • 8 schinkengriller sausages (600g)
  • 1 cup (200g) green lentils
  • 1½ cups (375ml) chicken stock
  • 1 stalk celery (150g), trimmed, chopped finely
  • 1 medium carrot (120g), chopped finely
  • 1 medium brown onion (150g), chopped finely
  • 2 sprigs fresh thyme
  • 2 cloves garlic, crushed
  • 400 canned diced tomatoes
  • 1 tablespoon wholegrain mustard

    Heat oil in a 4.5-litre (18-cup) slow cooker on sear (HIGH) setting; cook sausages, in batches, turning, for 5 minutes or until well browned. Remove from cooker.

    Add lentils and stock to cooker; stir to combine. Add celery, carrot, onion, thyme, garlic, tomatoes and sausages. Cook, covered, on low, for 3 hours.

    Remove sausages from cooker; cover to keep warm. Discard thyme. Stir mustard into lentil mixture; season to taste.

    Serve lentil mixture with sausages.
