Sausages with braised lentils

Method

1.Place lentils in a medium saucepan of cold water; bring to the boil. Reduce heat; simmer, uncovered, 20 minutes or until tender. Drain.
2.Heat 1 tablespoon of olive oil in a large frying pan, cook sausages over medium heat, until cooked through. Remove sausages from pan; drain excess fat from pan.
3.In same pan, cook shallot until soft. Add lentils; cook, stirring, 2 minutes. Remove from heat; stir in juice, remaining oil and parsley. Season to taste.
4.Slice sausages; serve with lentil mixture and lemon wedges.
