Salmon with shaved cauliflower salad
- 2 1/2 tablespoon extra virgin olive oil
- 220 gram skinless boneless salmon fillet
- 1 small clove garlic, crushed
- 1 anchovy fillet, chopped very finely
- 1 tablespoon lemon juice
- 2 tablespoon finely chopped roasted walnuts
- 1 tablespoon fresh flat-leaf parsley leaves
- 1/2 cup (100g) shaved cauliflower
Method
Salmon with shaved cauliflower salad
- 1Heat 2 teaspoons of the oil in a small frying pan over medium heat. Season salmon with salt, add to pan; cook for 3 minutes on one side, then turn over and cook for a further 1 minute or until just cooked through.
- 2Meanwhile, combine remaining ingredients, except the cauliflower, in a small bowl; season to taste.
- 3Serve salmon with cauliflower; drizzle with walnut mixture and sprinkle with extra parsley leaves, if you like.
Notes
Shave the cauliflower using a V-slicer or mandoline. You can accompany the fish with israeli couscous or quinoa, if you like.
