Roast pork rack with apple raspberry sauce

Apple is a traditional pairing for roast pork, adding raspberry just intensifies the delicious pairing of tender meat and applesauce. Serve with vinegary cabbage and potatoes.

Method

1.Preheat oven to 240°C.
2.Make sauce: Peel, core and quarter apples; slice thinly. Melt butter in medium saucepan; cook apple, stirring, about 5 minutes or until browned lightly. Add sugar, the water and berries; cook, stirring, 5 minutes or until berries soften and sauce thickens slightly.
3.Using sharp knife, score pork by making shallow cuts diagonally in both directions at 1cm intervals. Rub pork all over with oil; rub salt all over rind. Place pork, rind-side up, on oiled wire rack over large shallow baking dish; roast 30 minutes.
4.Reduce oven to 180°C; roast pork about 1 hour. Cover pork loosely with foil; stand 20 minutes.
5.Meanwhile, boil, steam or microwave potatoes until tender; drain.
6.Melt butter in large frying pan; cook onion and garlic, stirring, until onion softens. Add cabbage and vinegar; cook, stirring, until cabbage is tender. Add potatoes; cook, stirring, until combined.
7.Serve pork with cabbage and sauce.
