Method

1.Preheat oven to 220°C/425°F.
2.Wash chicken under cold water; pat dry inside and out with paper towel. If chicken not pre-butterflied, using kitchen scissors, cut along both sides of backbone; discard backbone.
3.Place chicken on bench, breast-side up; press down on the breastbone with the heel of your hand to flatten. Then put chicken in a large baking dish; rub combined oregano and oil all over chicken. Season.
4.Roast, uncovered, for 1 hour, or until chicken is cooked. Remove chicken from dish, cover; stand while tomatoes cook. Place tomatoes in dish, season; roast, uncovered, for 15 minutes or until softened.
5.Meanwhile, make gremolata. Combine garlic, lemon rind and parsley in a small bowl.
6.Sprinkle tomatoes with gremolata; serve with chicken.
