Hot sauce

Hot sauce is the perfect condiment to use if you want to add extra spice to your meal. Spoon a little hot sauce on enchiladas, tacos or even scrambled eggs.

Hot sauce
  • 3 ancho chillies
  • 1 cup (250ml) boiling water
  • 6 medium ripe tomatoes (900g), chopped coarsely
  • 4 clove garlic, quartered
  • 1 small brown onion (80g), chopped coarsely
  • 3 cloves
  • 2 tablespoon red wine vinegar
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon ground cumin
  • 2 tablespoon olive oil

    Cover chillies with the boiling water in small heatproof bowl; stand 20 minutes

    Meanwhile, blend or process tomato until smooth.

    Discard stalks from chillies; blend or process chilli and soaking liquid with garlic, onion, cloves, vinegar, herbs and cumin until smooth.

    Heat oil in large frying pan; cook chilli mixture, stirring, until mixture comes to the boil. Add tomato mixture; simmer, uncovered, stirring occasionally, about 1 hour or until reduced to about 3 cups. Season to taste; cool.
