Method

1.Place noodles in a medium heatproof bowl, cover with boiling water; separate with a fork, drain.
2.Heat half the oil in a wok; stir-fry beef, in batches, until browned. Remove from wok.
3.Heat remaining oil in wok; stir-fry onion until soft. Add ginger, garlic and chilli; stir-fry until fragrant. Add vegetables; stir-fry until tender.
4.Return beef to wok with noodles and sauces; stir-fry until heated through.

Dark soy sauce is deep brown, almost black in colour; it is rich, with a thicker consistency than other types. Pungent but not particularly salty, it is good for marinating. Available from Asian supermarkets.
