Hokkien mee with beef
  • 300 gram hokkien noodles
  • 1 tablespoon peanut oil
  • 700 gram beef strips
  • 1 brown onion (150g), sliced thinly
  • 2.5 centimetre piece fresh ginger (15g), grated
  • 2 clove garlic, crushed
  • 2 fresh small red thai (serrano) chillies, sliced thinly
  • 400 gram packaged fresh stir-fry vegetables
  • 2 tablespoon hoisin sauce
  • 1 tablespoon dark soy sauce

    Place noodles in a medium heatproof bowl, cover with boiling water; separate with a fork, drain.

    Heat half the oil in a wok; stir-fry beef, in batches, until browned. Remove from wok.

    Heat remaining oil in wok; stir-fry onion until soft. Add ginger, garlic and chilli; stir-fry until fragrant. Add vegetables; stir-fry until tender.

    Return beef to wok with noodles and sauces; stir-fry until heated through.


Dark soy sauce is deep brown, almost black in colour; it is rich, with a thicker consistency than other types. Pungent but not particularly salty, it is good for marinating. Available from Asian supermarkets.
