Method

1.On a heated, oiled grill plate (or grill or barbecue), cook corn for about 3 minutes or until kernels are tender and browned lightly; when cool enough to handle, cut kernels from cobs.
2.Spread cheese gently over tortillas. Top 4 of the tortillas with corn, capsicum, chilli and coriander; top with remaining tortillas. Press around edges firmly to seal quesadillas.
3.In a medium frying pan, heat butter over medium-low heat; cook quesadillas, one at a time, for about 2-3 minutes or until browned both sides and heated through.
4.Serve quesadillas with spinach and wedges.

A quesadilla (from queso, the Spanish word for cheese) is a tortilla “sandwich” containing cheese and any of a wide number of spicy filling ingredients, which is grilled, fried or toasted and usually served with salsa. You need to buy two untrimmed corn cobs (800g) to get the amount of trimmed corn needed for this recipe.
