Avocado and wasabi rice salad

This creamy, flavoursome dish makes a lovely light lunch or side dish.

Ingredients

Wasabi dressing
  • 3/4 cup (225g) mayonnaise
  • 2 tablespoon lime juice
  • 2 tablespoon rice wine vinegar
  • 3 teaspoon wasabi
Avocado and wasabi rice salad
  • 2 cup (400g) jasmine rice
  • 2 medium avocados (500g), halved, chopped coarsely
  • 2 tablespoon lime juice
  • 1 cup (50g) snow pea tendrils, chopped coarsely
  • 1 sheet nori, shredded finely

Method

Avocado and wasabi rice salad

    Combine ingredients for wasabi dressing in small bowl.

    Cook rice in large saucepan of boiling water, uncovered, until tender; drain. Rinse under cold water; drain.

    Combine avocado and juice in large bowl. Add rice, dressing, tendrils and nori; stir gently to combine.
