With just five main ingredients and a few pantry staples, you can create this fast and tasty version of dan dan noodles. It’s a spicy, simple and satisfying dinner for your summer camping trips, and can be easily cooked in a wok or frying pan at home.

Bring a large saucepan of salted water to the boil.
Place 2 teaspoons peanut butter, 2 teaspoons soy sauce and a quarter of the garlic in each serving bowl.
Heat oil in a large skillet or frying pan over high heat; cook mince, breaking it up with a spoon, for 8 minutes or until browned. Add hoisin sauce; cook for 1 minute or until caramelised.
Meanwhile, cook noodles and broccolini in a saucepan of boiling water for 3 minutes or until cooked through. Ladle 1/3 cup (80ml) noodle cooking water into each serving bowl, then drain noodles.
Stir peanut mixture and noodle cooking water in each bowl to combine. Top with noodles, pork, broccolini and chilli oil. Toss well before eating.

Dan dan noodles are traditionally made with pork mince, but you could use chicken. Broccolini can be substituted with buk choy, green beans or baby spinach leaves.
