Steph de Sousa’s one pan chicken risoni is quick and flavour-packed dinner idea.
It’s a one-pan wonder with tender chicken, rich sun-dried tomato pesto and creamy risoni. Perfect for a cosy dinner – who wouldn’t say yes!

Season your chicken with a pinch of salt and pepper. Heat a splash of olive oil in a medium frying pan over medium-high heat. Brown the chicken on both sides to create a tasty deep brown crust. Don’t worry if it’s not cooked through yet; we’ll get there!
Remove the chicken from the pan, then add the diced onion for a quick fry. Let them soak up all that flavour left behind by the chicken.
Stir in the tomato pesto, risoni, stock and cream. Watch as it all starts to bubble away with joy!
Return the chicken to the pan, turn the heat down to low, cover partially with a lid and let it simmer away for 15 minutes.
Remove the lid, add the green beans for their moment of glory and simmer for 5 minutes. Turn off the heat, pop the lid back on and relax for 5 minutes—you are looking for all that delicious liquid to be absorbed, the risoni to be perfectly al dente and your chicken cooked to perfection.
