This smashed cucumber salad is quick to make and delicious to eat. Serve it alongside grilled chicken or fish. For a quick meal, eat it with some steamed rice, and perhaps a couple of grilled prawns.
The dressing for this smashed cucumber salad can be made up to 2 days ahead.

Method
Place the dressing ingredients in a screw-top jar; shake well. Season to taste.
Place cucumbers on a chopping board; using the flat side of a knife, carefully smash the cucumbers until they crack open. Slice cucumber diagonally into 2cm pieces and place in a large bowl.
Pour the dressing over the cucumber; toss to coat.
To serve, top cucumber with green onion and sesame seeds.
Dish not suitable to freeze.
