Method

1.In a small bowl, combine lamb, soy sauce, cornflour, ginger, garlic, mirin and sesame oil. Marinate 3 hours.
2.Heat half the peanut oil in wok; stir-fry lamb mixture until browned. Remove from wok.
3.Heat remaining oil in wok; stir-fry brown onion and capsicum until tender. Return lamb to wok with sauces, the water and peas; stir-fry until hot. Remove from heat; stir in chilli and half the green onion. Serve sprinkled with remaining green onion.
