1.Heat oil in a wok or large frying pan on high. Add onion. Stir-fry for 2-3 minutes. Add garlic and ginger. Stir-fry for 1 minute.
2.Add the beef and stir-fry for 3 minutes or until well browned. Stir through gai lan, capsicum and snow peas.
3.In a small jug, combine the stock and oyster sauce. Add to wok and simmer for 1 minute, tossing, until vegetables are tender but still crisp.
4.Serve with rice.

Because of the high temperatures needed for stir-frying, the oil used must have a high smoke point, meaning the stage at which an oil breaks down to glycerol and free fatty acids. Extra virgin olive oil is not generally used as the strong flavour can overpower a stir-fry. Try peanut, canola or groundnut oil. This dish also works well with chicken, pork or fish.
