Julie’s Sticky Soy & Marmalade Chicken Wings

PREP TIME + COOK TIME 40 MINUTES
SERVES 4
Ingredients
1 cup (340g) marmalade
1 cup (250ml) orange juice
1 tablespoon soy sauce
2 cloves garlic, crushed 3cm piece fresh ginger, peeled, finely grated
½ teaspoon ground white pepper
2 kg chicken wing nibbles
spring onion, chopped, to garnish
steamed rice and steamed broccolini, to serve
Method
- Line two oven trays with baking paper; place a rack on each tray.
- Using the LG Induction Cooktop, stir marmalade, orange juice, soy sauce, garlic, ginger and pepper in a small saucepan; bring to the boil. Reduce heat; simmer, uncovered, for 10 minutes or until thickened. Remove from heat. Cool. Reserve 1/2 cup (125ml) of the glaze for serving.
- Place chicken in a large bowl. Add 3/4 cup (185ml) marmalade glaze to chicken; turn several times until well coated.
- Divide chicken between trays. Set LG InstaView Full steam oven to air fryer mode, select temperature 230°C. Cook chicken on the second and fourth rack for 15 minutes. Turn chicken over halfway through cooking time, brush with remaining glaze. Rotate oven trays. Cook for a further 15 minutes or until cooked through and golden brown.
- Garnish chicken wings with chopped spring onion and serve with reserved glaze, rice and broccolini.
