Method

1.Squeeze filling from sausage casing. Cook sausage in large heated frying pan, stirring, until sausage browns and crumbles. Remove from pan; retain oil in pan.
2.Add zucchini to same pan; cook, stirring, until browned and tender.
3.Return sausage to pan; cook, stirring, until combined.

If fresh chorizo is unavailable, substitute sliced semi-dried chorizo (salami-style).
