This sweet treat is perfect to keep on hand to serve with tea for unexpected guests at Christmas time

  • 200 gram broken white chocolate
  • 150 millilitre condensed milk
  • 20 gram butter
  • 4 egg yolks
  • 250 gram packet, crushed sweet biscuits
  • 3/4 cup dried cranberries
  • 1/2 cup pistachios, roughly chopped

    In a large, heatproof bowl, combine chocolate, condensed milk and butter. Place over saucepan of simmering water, stirring occasionally, until melted and smooth. Whisk in egg yolks and remove from heat.

    Stir biscuits, cranberries and pistachios through mixture. 3 Shape into 6 x 4cm diameter logs. Place each log onto a piece of baking paper. Roll up firmly. Twist paper at ends to seal. Chill 2 hours until set. Store in airtight container in fridge. Rewrap in cellophane to give as gifts.
