White Christmas
- 2 cup (70g) rice bubbles
- 1 cup (80g) desiccated coconut
- 1 cup (100g) milk powder
- 1 cup (160g) icing sugar mixture
- 1/2 cup (75g) raisins
- 1/2 cup (80g) currants
- 1/2 cup (100g) red and green glace cherries, halved
- 250 gram copha
Method
White Christmas
- 1Line base and sides of a 19 x 29cm large slice pan with baking paper.
- 2Combine rice bubbles, coconut, milk powder and icing sugar in a bowl. Add raisins, currants and cherries; mix through.
- 3Melt copha on low heat and pour into rice bubble mixture; stir to combine well.
- 4Turn mixture into prepared pan; press down well with back of a large spoon.
- 5Refrigerate 2 hours, until set and chilled. Cut into pieces and serve.
