White chocolate macadamia cookies

The everyday cookie gets a makeover with this recipe by adding a few special ingredients. Turn them into a real decadent treat with macadamia's and white chocolate.

White chocolate macadamia cookies
  • 1 1/2 cup plain flour
  • 1/2 teaspoon baking soda
  • 1/4 cup caster sugar
  • 1/3 cup firmly packed light brown sugar
  • 125 gram butter, melted
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 180 gram white choc bits
  • 3/4 cup roasted macadamias, chopped coarsely

    Preheat oven to 200°C/400°F. Line two oven trays with baking paper.

    Sift flour, soda and sugars into large bowl. Stir in butter, extract and egg, then chocolate and nuts.

    Drop rounded tablespoons of mixture, 5cm (2-inches) apart on trays.

    Bake cookies about 10 minutes. Cool on trays.
