Microwave white chocolate caramel puddings

These puddings are so easy, you don't even need an oven! Just combine your ingredients, fill up your ramekins and pop them in the microwave. Late-night snacking, here we come!

Microwave white chocolate caramel puddings
  • 200 gram packet jersey caramels, chopped
  • 1/2 cup thickened cream
  • 1/2 teaspoon sea salt
  • 1 1/4 cup self-raising flour
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup milk
  • 1 egg, lightly whisked
  • 30 gram butter, melted
  • 100 gram white eating chocolate, chopped
  • 1/3 cup unsalted macadamias, chopped

    Grease 6 x ¾-cup microwave-safe dishes. Place half the caramels and the cream in a large microwave-safe bowl. Microwave on Medium (50%) in 1-minute bursts, stirring, until caramels are melted and mixture is smooth. Stir in salt.

    Place flour and sugar in a large bowl. Make a well at centre. Stir in milk, egg and butter. Fold in remaining caramels, white chocolate and macadamias. Spoon mixture into prepared dishes; level surfaces.

    Microwave puddings, in batches, on Medium (50%) for 2 minutes or until tops spring back when lightly touched. Serve drizzled with salted caramel sauce.
