Warm red cabbage & bacon salad
  • 2 rindless bacon rashers (130g), chopped coarsely
  • 1 tablespoon olive oil
  • 6 cup (480g) coarsely shredded red cabbage
  • 2 tablespoon red wine vinegar
  • 1 tablespoon brown sugar
  • 1/2 cup coarsely chopped fresh flat-leaf parsley

    Cook bacon in heated large frying pan until crisp. Drain on absorbent paper.

    Heat oil in same pan; cook cabbage, stirring, about 5 minutes or until softened. Add vinegar and sugar; cook, stirring, about 10 minutes or until liquid evaporates.

    Return bacon to pan; stir until heated through. Remove from heat; stir in parsley.
