Ingredients

Warm lamb sausage and ravioli salad
  • 1.2 kilogram thick lamb sausages
  • 6 tomatoes (900g), chopped coarsely
  • 625 gram roasted vegetable ravioli
  • 100 gram baby rocket leaves

Method

    Cook sausages in heated oiled large frying pan. Remove from pan, slice thickly; cover to keep warm.

    Add tomato to pan; bring to the boil. Simmer, uncovered, about 2 minutes or until thickened slightly. Season to taste.

    Meanwhile, cook ravioli in large saucepan of boiling water until tender; drain.

    Combine sausages, tomato mixture, ravioli and half the rocket in large bowl. Serve with remaining rocket leaves.
