  • 1 clove garlic, crushed
  • 1 fresh long red chilli, finely chopped
  • 1/4 cup lime juice
  • 1/4 cup fish sauce
  • 1/4 cup grated palm sugar
  • 1/2 cup water
  • 1 medium carrot, coarsely grated
  • salt and pepper, to season
